El Bulli, una fundación tecno-ecológica

elBullifoundation será más ecológico y tecnológico

"Me siento liberado. Ya está. La gente ya se cree el proyecto y ve que no es un farol". Ferran Adrià soltó una noticia bomba el año pasado en Madrid Fusión al anunciar que elBulli se cerraría como restaurante y cambiaría de rumbo. "Volveremos en 2014 con otro formato", anunció. Serían dos años de paréntesis. En Madrid Fusión 2011 la noticia ha sido contar, en palabras e imágenes, elbullifoundation: "un proyecto global de creatividad hecho por gente de aquí".

El impacto y el disfrute emocional de la comida bulliniana se percibirá en un complejo de arquitectura orgánica, mimetizada con el paisaje y nutriéndose de él sin dañarlo. Y también se observará continuamente en Internet. Será un Bulli ecológico y tecnológico. La corporación vasca Tecnalia se encargará de la ingeniería, que hasta sacará energía de las algas, y la multinacional española Telefónica posibilitará que www.elbullifoundation.org sea un escaparate continuo en Internet de lo que se cocerá en Cala Montjoi (Roses, Girona).

El arquitecto catalán Enric Ruiz Geli traducirá las ideas de Adrià en una "arquitectura bulliniana, de partículas, tecnoemocional", con cero contaminación: se producirá la energía que se consuma. Aunque los sueños son difícil de explicar y habrá que vivir este sueño catalán-universal en el parque natural de Cap de Creus, unas imágenes apuntaron los materiales de construcción de la nueva aventura: tejas hechas por el ceramista de Miró que son rojas como coral y estarán vivas como los hongos y musgos, una playa en donde antes había jardín, edificios Ideario como botellas de vidrio, cubiertas "vivas" con hojas integradas, sensores que medirán el viento, la humedad... Un diseño espectacular donde la rutina no tendrá lugar porque imperará la libertad de creación.

El nuevo Bulli será un centro de creatividad multidisciplinar. La cocina se relacionará con distintas disciplinas, ciencias, artes, técnicas. El objetivo final será gastronómico, pero "habrá libertad total de pensamiento y acción". Una mesa puede ser un plató o un escenario para probar las mejores horas de beber o comer. Por ejemplo. Con los cocineros trabajarán diseñadores, filósofos, científicos, arquitectos.... Será como un laboratorio permanente y un taller permanente. Las dudas, las preguntas y las respuestas, estarán en Cala Montjoi y en la Red. "Desde la humildad de quien no quiere dejar de aprender", advierte el chef catalán. Ya no importan las listas ni los nombramientos de número uno mundial. "He tenido mucha suerte en la vida, y quiero devolverle a la sociedad lo que me ha dado".

"Sigo por ellos y por vosotros", afirmó un Adrià visiblemente emocionado mirando al video donde aparecía su equipo y al auditorio, donde se habían congregado miles de personas y sonaban ovaciones y bravos.

El 30 de julio será el último día de comidas y el 31 de julio empieza elBulli reciclado en fundación: arrancarán las actividades de articulación de las proyectos creativos y de difusión mundial (Perú, China, Estados Unidos...). Aunque la cocina se cierre, los cerebros de elBulli hervirán continuamente.

"elBulli no cierra porque perdía dinero y no funcionaba, eso ha sido una especulación. ElBulli no pierde dinero, cuesta dinero", insistió Adrià, harto de especulaciones. Además de ser sostenible en términos de arquitectura, elBulli reconvertido en fundación estudiará su sostenibilidad a nivel económico y la optimización del equipo. Esto lo investiga con la Universidad de Harvard. Pero ya está calculado que precisa una inversión de 600.000 a 800.000 euros anuales. El dinero lo aportarán los socios (Ferran Adrià y Juli Soler) con los otros negocios que desarrollan (asesorías, conferencias, libros, diseño de productos...) "Que un pequeño empresario pueda hacer una fundación para hacer cosas es muy importante. Comparte su talento. En el momento actual hay una responsabilidad muy importante que debe entender el empresario: no todo lo puede hacer la Administración. A ver si alentamos que haya otras fundaciones en otros campos de creatividad", dijo Adrià.

Cooking with Liquid Nitrogen - Ferran Adria and Harold McGee

Chef Ferran Adria, head chef of elBulli, and Harold McGee, author of On Food and Cooking, describe how liquid nitrogen is used in restaurant kitchens to create innovative dishes like alcohol sorbets and frozen pistachio puree truffles.

No one can get into elBulli, Ferran Adria's restaurant on the northeast coast of Spain. But plenty of people certainly try: every year, the restaurant receives over two million requests for only 8,000 seats during the six months it is open. For the other six months, Adria, who is proud to be called the "Salvador Dali of the Kitchen," travels, dreams, and creates at his "food laboratory" in Barcelona, called elBulli Taller, where his team includes a chemist and an industrial designer who also design plates and serving utensils to go with the food.

No wonder, as Corby Kummer wrote in The Atlantic, "making the twisty two-hour drive from Barcelona for a dinner that ends well into the wee hours has become a notch on every foodie's belt--perhaps the notch, given the international derby to get reservations."

For mortals who won't be making the trip soon--or who didn't hit the lottery last year in the German contemporary-art exhibition Documenta, which flew two people at random per day to el Bulli to experience "the exhibition" that is dinner at elBulli--Adria has given the world A Day at elBulli: An Insight into the Ideas, Methods and Creativity of Ferran Adria.

This is the first book to take a behind-the-scenes look at the restaurant whose sources and methods every ambitious chef wants to know. It shows a full working day from dawn until the last late-night guests leave, using photographs, menus, recipes and diagrams that reveal the restaurant's preparations, food philosophy, and surroundings. -- NYPL

Ferran Adria began his culinary career washing dishes at a French restaurant. In 1984, at the age of 22, Adria joined the kitchen staff of elBulli, a traditional French restaurant. Eighteen months later, he became head chef. He soon began learning techniques from culinary masters and performing culinary experiments based on the use of fresh materials. In line with Adria 's experimental philosophy, he closes elBulli for six months every year to travel in search of new inspiration and perfect new recipes. In response to the question--can food be art? Adria has said, "That's for other people to decide. Cooking is cooking. And if it exists alongside art, that's wonderful."

Harold McGee writes about the science of food and cooking. Twenty years after its first publication, the revised On Food and Cooking: The Science and Lore of the Kitchen was named best food reference of 2004 by the IACP and the James Beard Foundation. In 2005, Bon Appetit named McGee food writer of the year.

In 2008, Time Magazine named him to its annual list of the world's most influential people. McGee has written for many publications, including The World Book Encyclopedia, Nature, Food & Wine, and Fine Cooking and has appeared on public television's "Diary of a Foodie" and on National Public Radio's "All Things Considered," "Fresh Air," and "Science Friday." He writes a monthly column, "The Curious Cook," for The New York Times.
